The on-pitch gameplay in FIFA 20 is based on two key features: the improved 11v11 simulation and the innovative inclusion of VOLTA Football, a street-style mode that moves the action to small-sided, flair-oriented games set in tough urban locations. In regular matches, the game features a new ball-physics system which causes the ball to move independently of the players' animations, leading to more realistic deflections, bobbles, and chaotic loose-ball situations that can unexpectedly change the course of the game. The Active Touch System has been redesigned so that first-touch control is more responsive and allows players to trap, flick, or knock the ball past defenders using context-sensitive animations that depend on the players' ratings and their positioning.

The Composed Finishing mechanism has been revised so that the accuracy of a shot is strongly influenced by the striker's balance, body angle, and the distance of the defenders nearby, making poorly balanced or hasty shots less effective while rewarding well-timed and controlled shots. Passing has been carefully adjusted with the introduction of a new Strafe Dribble that enables better ball control in crowded areas, and defence now includes a manual tackling system that demands accurate timing and directional input in order to gain the ball cleanly, thus reducing the impact of AI-assisted interception spamming.

VOLTA Football marks a complete break with the conventional pitch by featuring 3v3, 4v4, and 5v5 games held on rooftop courts, underground car parks, and futsal arenas, with skill moves, wall passes, and trick shots being recognised by a specific VOLTA Skill Meter that grants access to special flair abilities. Players are able to create a custom avatar and form a street team by bringing in real-world players (such as Mbappé and Alex Scott), progressing through a narrative-driven campaign that takes them from local pickup games all the way to global invitational tournaments against famous street footballers.

Career Mode is given subtle but important updates, including a new interactive match simulation which lets players enter live matches at crucial moments, as well as dynamic manager objectives that change according to the club's expectations and the pressure from the board. FIFA Ultimate Team (FUT) is developed with the addition of Season Objectives and Icon Swaps, a feature that rewards committed play with untradeable top-tier cards, while the Companion App and the web transfer market allow squad management on the move.

The final aim in all modes is to master the two different aspects of FIFA 20—balancing the methodical, tactical realism of professional football with the spontaneous, expressive creativity of street soccer—resulting in a full football experience that appeals to both simulation fans and those who enjoy freestyle play.
